Freeze Drying

This is a method of removing moisture from objects to facilitate long-term preservation or transportation of food, etc.

What is vacuum freeze drying?

Unless food is digested as it is harvested, natural nutrient contained in the food may get lost since it is gradually and continually diminished. This is why we use the rapid freeze drying method to minimize the loss of nutrient and maintain its freshness. Vegetable and grain are frozen soon after the harvest to instantaneously feeze moisture contained in them. Lowered pressure at this point will help with evaporation of moisture to dry them. This is the rapid freeze drying method which maintains the high quality of ingredient and it is mostly used in food preparation or medicine production.

Advantages of vacuum freeze drying
Minimize enzyme and nutrient destruction
The nutrients our body needs can be consumed through food, but they are very sensitive to heat and are often destroyed when heated or sterilized. Because the vacuum freeze-drying method does not involve heat treatment, nutrient destruction can be minimized. Therefore, the pharmaceutical and food industries that require high quality use vacuum freeze-drying, a drying method that freezes food and then sublimates moisture in a vacuum.
Preservation of shape, size, taste and originality
Vacuum freeze drying processes raw materials in a frozen state, so phenomena such as shrinkage or surface hardening do not occur due to dehydration, and physical and chemical changes in the shape and structure of the material are extremely minimal.
Preserved without additives and preservatives
Because it is processed at low temperatures in a closed device, there is less contamination by microorganisms. Additionally, because moisture is extremely limited, long-term storage is possible without additives or preservatives.

Vacuum Quick Freeze

The vacuum quick freeze drying method is more expensive than any other drying method and requires a high level of know-how. Therefore, it is an important facility for making excellent products, and any company that makes and sells raw food must have its own freeze-drying facility. Daum has the largest freeze-drying plant in the raw food industry in Sacheon, Gyeongnam.
