Unless food is digested as it is harvested, natural nutrient contained in the food may get lost since it is gradually and continually diminished. This is why we use the rapid freeze drying method to minimize the loss of nutrient and maintain its freshness. Vegetable and grain are frozen soon after the harvest to instantaneously freeze moisture contained in them. Lowered pressure at this point will help with evaporation of moisture to dry them. This is the rapid freeze drying method which maintains the high quality of ingredient and it is mostly used in food preparation or medicine production.
